We don't offer any live demos - but there are multiple YouTube videos showing-off TinyPilot and its features. We link to a few on our home page. A quick search on YouTube will bring up the most popular ones too. Although, I should note that some of them show older versions of the TinyPilot Voyager.
I personally like the Learn Linux TV video showing-off the TinyPilot Voyager 2 from a few months ago. Jay gives a great overview of what TinyPilot does, and he demonstrates some of the features too - like booting from virtual disk images.
